Dabiz Muñoz questions the future of ‘DiverXO’ in his new Netflix documentary

Netflix delves into the depths of the ‘UniverXO Dabiz‘ in a documentary in which Dabiz Muñoz reviews the past, present and future of his star restaurant.

‘Many times we don’t see what lies beyond a success story, but behind it there is always a story of sacrifice, effort, perseverance, blind faith in oneself and sometimes, as in my case, a good dose of mental storm,’ reveals the three-time world’s best chef about the cathartic process he has had to go through throughout the 18-year history of DiverXO.

The documentary projects the unbridled ambition of the chef who bases his cuisine on eternal innovation; on the incessant search for culinary subversion and perfection that has led him on many occasions to the limit.

All this process, his most intimate thoughts and the history of the restaurant are intermingled throughout five chapters that take a journey through Dabiz’s UniverXO with the help of the people who know him best, such as his partner Cristina Pedroche and his parents, in order to understand the sacrifices and dilemmas faced by one of the most brilliant minds in haute cuisine.

Muñoz asks himself in the documentary a series of existential and work-related questions about the future of his cuisine and the restaurant, through statements such as: ‘I don’t know if it’s time to close DiverXO’ or ‘I’ve been dedicated solely to DiverXO for 18 years, and after 18 years I don’t know if it still makes so much sense or if I feel like changing my life focus’. However, the documentary also captures moments of ecstasy and celebration, such as the one he felt when he earned RavioXO’s first Michelin star. ‘How do you celebrate a star at #UniverxoDabiz? Easy, by going for the next one’.

All these cathartic sequences are interspersed with the first day of service at Streetxo Dubai, as well as different culinary reactions such as when Dabiz tastes a puffer fish in Tokyo, ‘on the edge of death’ that are part of his gastronomic journey around the world, which is also projected in the audiovisual piece. ‘Yes, there will be many trips in Univer❌⭕️ Dabiz @netflixes.
