Matthew McConaughey shares the stage this time with Gordon Ramsay to star in a master class to teach his audience how to create the perfect steak.

Watching it, the first thing that becomes clear to us is that we must be quite generous with the oil. It turns out that to get the ‘ideal crust’ you need an abundant amount of olive oil, in the purest Mediterranean style.

Once the steak has been turned and fried for about 3-4 minutes, it is time to ‘baste’ the butter. That is, pour the hot oil and butter mixture over the steak. This technique adds layers of flavor to the proteins while helping to form the crust. The butter then creates what Ramsay calls a “beurre noisette,” and what’s left over of this toasted butter will be used to roast potatoes or vegetables. A practical tip to reduce waste and maximize flavors. Finally, Gordon lets the oil rest on a rack to pour off the excess butter and serve it on the plate with some fried eggs on top.
