NOI

Located in the Salamanca neighborhood, Noi is a jewel of Italian haute cuisine directed by the talented chef Gianni Pinto. Pasta here is treated with the same delicacy as a chef would treat caviar or foie gras. The menu offers dishes such as spaghettoni alla chitarra with sea urchin and bottarga, which combine flavors of the sea with handmade pasta. The ravioli stuffed with ossobuco with its reduced bottom also stand out, a bite that shows the perfect integration of tradition and avant-garde in each dish.

Don Giovanni

Chef Andrea Tumbarello has turned Don Giovanni into an undisputed benchmark of Italian haute cuisine in Madrid. Beata Pasta

The great temple of sacred pasta in the capital is called Beata Pasta. There, its Neapolitan chef Ciro Cristiano elevates fresh pasta to the status of religion through his recipes inspired by the gastronomy of southern Italy; reinterpreted in the midst of a vibrant design space.

On the occasion of International Pasta Day, the restaurant debuts an exclusive proposal in collaboration with Ana Iglesias, winner of MasterChef 8. In honor of her second last name, the chef fuses tradition with innovation in the ‘Ravioli Panichelli’, a ravioli filled with a delicious blend of flavored pumpkin, toasted walnuts, stracciatella di Puglia, crispy guanciale and fresh basil. This limited edition recipe will be available from October 25 to November 25 at Beata Pasta Princesa and Beata Pasta Bilbao.

Relleno

Relleno‘s success is linked to the contemporary art of ravioli. Following in that footsteps, Relleno recently opened a new location in Mercado de San Leopoldo where you can enjoy their ravioli with different fillings and sauces, which can be customized to taste. In their menu, they have authentic hits such as their boletus ravioli with gorgonzola and walnuts, ricotta and lemon ravioli with burrata pesto and pistachio, or their burrata ravioli with amatriciana.

Circolo Popolare

Circolo Popolare, the latest star to join Big Mamma’s galaxy, is an Italian restaurant that has caused a sensation in the capital, both for its design work directed by Studio Kiki, and for its elevated reinterpretation of Italian cuisine. Some of the pasta dishes designed by chef Luigi Venturo, such as Pappardelle with lobster or pasta with truffle and stracciatela, dazzle.
