The Mómö revolution continues. And it does so by reinventing the classic Turkish street food dish through the art of sophistication. After having transcended in the scene through collaborations with culinary references such as Hugo Muñoz or Roberto Martínez Foronda, now the restaurant introduces a new updated version of its ‘kebab not kebab’ made with the delicious Don Lay’s lacquered duck.
This @momonotkebab creation, presented on a display case and wrapped in the brand’s characteristic golden paper, is characterized by being suspended in a halo of exclusivity, as only 99 units of the kebab will be on sale during October 9.
In the lacquered duck kebab, two stars of the Madrid collide: the Cantonese cuisine of Nieves Ye and the gourmet Turkish identity of Mómö in a new culinary masterpiece.
The main protagonist of the dish is Don Lay’s lacquered duck, seasoned with sesame and chili oil, sliced on the spot and placed on Mómö’s artisan pita bread. Asia is introduced into the preparation by the hand of its hoisin sauce, the classic sauce that usually accompanies duck. To all this is added a surprising twist of cucumber, melon for a sweet touch, celery and a green tzatziki sauce.
The Mómö x Don Lay kebabs can be tasted for 22 euros from Mómö’s aestheticized space, set in a subway car, installed at 9 Hartzenbusch Street.
