This is Tomás Ucha, the new sommelier at DiverXO

The prestigious Galician sommelier is now part of Dabiz Muñoz’s UniverXO.

After a month of Miguel Ángel Millán‘s departure as sommelier at DiverXO for reasons such as ‘not being able to maintain his enthusiasm for wine’, Tomás Ucha now takes over from him after three years in charge of the sommelier at Berria, one of the best wine bars in Spain, which has more than 3,5000 national and international references in Madrid’s Plaza de la Independencia.

Dabiz Muñoz has just signed Ucha as his new sommelier, once again highlighting the art of wine in his UniverXO. And he does so with one of the great figures of the sector. Ucha, who is only 31 years old, has a long experience in the hotel and catering sector as a waiter in restaurants such as Maruja Lión (Vigo), and as a sommelier in prestigious culinary spaces such as O Eirado da Leña, in Pontevedra. He later became head sommelier at Mugaritz and in London at Les 110 de Taillevent.

In recent years, Tomás has been in charge of sommelier management at Berria, as well as holding the title of ‘Advanced in the Court of Master Sommeliers’, which he has received twice as the best sommelier in Galicia, and second best in the national competition. Now, he is entering a new phase in one of the best in the world, joining the gastronomic space of NH Eurobuilding in order to prepare and continue the legacy of Miguel Ángel Millán at DiverXO.
