This is the cocido that Iker Casillas ate to celebrate the day of the Madrid dish par excellence

The former Real Madrid goalkeeper enjoyed a good Madrid stew in one of the temples of the capital: La Gran Tasca.

As a good Madrilenian, Iker Casillas is a man of customs and he also wanted to pay tribute to the Madrid dish par excellence: the cocido (stew). Every February 27 is celebrated its international day and the former Real Madrid goalkeeper did not want to miss the event by visiting one of the temples of cocido. This is La Gran Tasca, which has been making one of the most emblematic cocido in the capital since 1942 (and which has won numerous awards). In fact, in the 14th edition of the Ruta del Cocido, La Gran Tasca won the prize for the best “vuelco de Carnes y Embutidos”. The restaurant proudly shared an image of the footballer during his visit to the restaurant.

The secret of the success of their cocido is very simple: a careful selection of the raw material and a tradition that remains intact more than 80 years later. On their website, they detail the ritual of their Gran Cocido Madrileño, where, above all, kindness prevails, and it is served in two servings.

It Gran Cocido in two ‘vuelcos’

Regarding the ingredients that make up this iconic dish, the restaurant opts for an excellent selection of meats and sausages mostly from the Sierra de Guadarrama, Avila and Tineo (Asturias). The list of ingredients includes:

  • White Iberian bacon
  • Iberian streaky bacon
  • Special morcillo de añojo
  • Knuckle of ham tip
  • Country hen
  • Iberian pork ribs
  • Cane bone with its marrow
  • Asturian homemade sausage smoked in holm oak firewood
  • Artisan Tineo onion black pudding
  • Its mythical “pelota madrileña” of minced beef and pork.
  • Selected Castilian Chickpeas
  • Fresh Vegetables (Galician potato, cabbage, red bell pepper and carrot).

When it comes to serving it, at La Gran Tasca it is served in two ‘vuelcos’. The first is the tureen of noodles accompanied by chili peppers and spring onions. Thus, they leave the tureen in the center of the table so that each diner can repeat if they wish. In the second ‘vuelco’ the protagonist is his famous tray with the rest of the ingredients to finish this tribute to Madrid’s gastronomy as it should.
