Although it is a very well known dish in our gastronomy, the name atascaburras attracts a lot of attention. This popular recipe from Albacete is very typical in the mountains, especially in winter on snowy days. Its main ingredient is cod and the result is very similar to other popular dishes such as ajoarriero. Atascaburras recipe

Ingredients:

  • 350 g of desalted cod
  • 5 medium potatoes
  • 3 cloves of garlic
  • 3 hard-boiled eggs
  • olive oil
  • Walnuts.
  • Salt
  • Sweet paprika

Preparation:

  • The preparation is very simple. First peel the potatoes and cook them for half an hour.
  • Also cook the codfish separately for 5 minutes. Reserve and crumble it.
  • Crush the garlic cloves in a mortar with a pinch of salt.
  • Add the potatoes to the mortar and mash well to integrate everything, along with several dashes of oil and sweet paprika.
  • Finally, add the crumbled cod and continue mixing.
  • Garnish with pieces of hard-boiled egg and walnuts.
