Actress Sofia Vergara has been visiting our country these days to promote her new Netflix miniseries, Griselda. The Colombian actress has conducted numerous interviews, including her participation in El Hormiguero, but she has also taken advantage of her stay in the capital to take a walk around the capital and some gastronomic tribute. To eat well in Madrid, Sofia Vergara and her team opted for the well-known restaurant La Bien Aparecida, owned by Paco Quiros, of the popular Cañadio group.
Located in the Salamanca district, specifically at Jorge Juan 8, La Bien Aparecida specializes in Cantabrian cuisine, as Paco Quirós is considered one of the great referents of the gastronomy of this region. The stoves are in charge of chef José de Dios, whose proposal are elaborations with art, which merge traditional cuisine with avant-garde proposals.
Traditional dishes with an avant-garde touch
The result is a menu where you will find typical dishes of Spanish gastronomy such as the Ensaladilla La Bien Aparecida, the creamy Croquetas de huevo cocido y lacón, the Anchoas del Cantábrico or the Rabas fritas de Calamar al estilo Santander.
You cannot miss other references to the northern cuisine as the Purrusalda with soft garlic velouté, fine cream of cod and fresh pasta, the Cachón (cuttlefish) stewed in its ink with fried egg and chipirón sauce, the Mellow rice with fine clams (as in Pedreña) or the Galician clams pan-fried Cañadío 1981 style, among many other options. With a clear focus on quality products, any of their meats, fish and rice dishes will be a winning choice. Also a must is their Cañadío cheesecake (1981), which we are sure actress Sofía Vergara tried during her evening at La Bien Aparecida.
Living up to the restaurant’s slogan, ‘From heaven to Madrid’, a visit to La Bien Aparecida will be like enjoying a fine dining experience, just as Sofia Vergara herself did.
