How to prepare julienne soup, a healthy vegetable recipe to combat cold weather

Now that the cold has definitely arrived and winter is just around the corner, it is time to dust off all the spoon dishes that suit us very well at this time of the year. A highly recommended recipe for these days is julienne soup, a hot broth based on vegetables cut in julienne – hence its name – which is very healthy, delicious and quick to make. If you still don’t know how to prepare it, here is the step-by-step.

Julienne soup recipe

Ingredients:

  • 1.5 l vegetable broth (homemade or prepared, as you prefer)
  • 120 g cabbage
  • 2 carrots
  • 1 leek
  • 1 turnip
  • 1 stick of celery
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation:

  • To begin, wash the vegetables well. Peel the carrots, turnip and celery, remove the outer leaves from the cabbage and remove the green part of the leeks.
  • Cut all the vegetables into thin, elongated strips, julienne style. You can do it with a special grater or meticulously with a knife.
  • Then, just fill a pot with water, pour a dash of oil and a little salt. Add the chopped vegetables and sauté over medium-high heat for 10 minutes.
  • Then, pour the vegetable stock and put it on high heat until it starts to boil. Then, lower it to medium-low heat for about 20 minutes.
  • Taste and adjust the salt or season to taste. Serve it very hot and enjoy it.
