Dabiz Muñoz is on an express visit to Paris and has launched a message through his social networks for his followers to recommend the best gastronomic experience in the city on the only night he is in the capital. We have analyzed the hotspots that could best suit the Madrid native, taking into account that the best chef in the world is very fond of Asian food with an international fusion, spicy and spices and, above all, creative proposals that leave no one indifferent. For this reason, we have selected these three restaurants in Paris that we believe will satisfy you.
Restaurant A.T
Dabiz Muñoz has probably already tried the proposal of chef Atsushi Tanaka, since he follows him on social networks as well as other renowned chefs such as Eneko Atxa, Albert Adrià, Dani García or Quique Dacosta. Precisely in one of the restaurants of the latter, Tanaka worked a few years ago. But why could this restaurant be a good fit for him? Because at A.T. creativity and imagination have no limits. In fact, the chef himself explains that it is impossible to categorize his culinary identity, because his cuisine is a fusion of Japan, Spain, Scandinavian countries and France; to which is also added the influence of numerous European techniques such as molecular cuisine, Nordic cuisine or French classicism.
In addition, Tanaka is a restless chef like Muñoz and does not stop traveling around the world. He is already considering sharing his cuisine in places like Mexico, New York, Japan, Peru or Colombia, through ephemeral restaurants. His Tasting Menu is a particular logbook in which he reflects his own culinary journey.
The chef also plays a lot with tonalities, textures and reinterpretations of the same ingredient. Some of his curious creations are the Green Inspiration, crispy spinach tartilla, mussel emotion, smoked bay leaves; the Smoked tuna tartar with sakura leaves, Roe trout, Yuzu, tomato water; or Grilled lobster wrapped in fig leaves and smoked, fig jam, almonds; to give a few examples.

Yam’Tcha
Another possible option for Muñoz would be the restaurant Yam’Tcha, where chef Adeline Grattard proposes a simple cuisine but with a great taste for ingredients. In this case, less is more and Grattard opts for just a few ingredients. Through original and subtle combinations, she offers dishes that mainly fuse French and Chinese cuisine. One of her star dishes is the bao stuffed with stilton cheese, which, in her own words, is “the story of our lives, because it combines France and Hong Kong” (Adeline’s husband is from Hong Kong). She also uses recipes such as XO sauce, vinegared black rice or seafood jus.
The French chef appeared in an episode of Netflix’s Chef’s Table: France, where she explained more about the culinary concept of her restaurant: “Yam’Tcha is a cuisine driven by love and emotion. I don’t have written recipes. I don’t write anything down. I think it’s not so spontaneous if you do. If the staff gets obsessed with recipes, they freeze things. They try to be too exact. They don’t work with as much heart. We never weigh the sauces. We always make them instinctively. It changes all the time.” For aspects like this, surely, Adeline’s elaborations could surprise Dabiz Muñoz.
Another original thing about the restaurant is that it offers a pairing based on Asian teas. In fact, yam’tcha in Chinese means “tea drinking”. Something in common with the Madrid chef is the diversification of the business. The Frenchwoman also owns a takeaway store that specializes in tea and dim sums.

Sola
We finish our recommendations with the restaurant Sola. Located next to the Seine River, here chef Kosuke Nabeta combines his facet as a cook with his passion for ceramics. The chef of Japanese origin proposes a fusion cuisine between Japanese roots and the most traditional ingredients from the interior of France, always with great respect for the product and the producers.
In his creations, Nabeta uses Japanese techniques such as drying, fermentation or marinating, as well as typical Japanese ingredients such as sake, ponzu or mizuna, to fuse them with other products such as caviar or lobster. Some of its star dishes are the veal sweetbreads served with a rice cake covered with a truffle emulsion; the Chickpeas with cream and crumble, black sesame ice cream and tuiles, Mochi, Kuro-Mitsu foam and homemade Shichimi; or the Datterino cherry tomato on 4 sides: Surinagashi sphere, tomato water jelly, skin and seed chips and dried tomato powder.
The experience at Sola goes beyond gastronomy, involving all the senses and turning the evening into a sensory spectacle.
