The showcases of La Mallorquina will now have a new limited edition sweet: Las ‘gastrónomas’, an innovative cinnamon roll that reflects the personality of the journalist behind the blog ‘La Gastrónoma‘, and the know-how of the emblematic patisserie.
This new creation is conceived as an evolution of the renowned cinnamon roll, interpreted based on Mapi Hermida’s identity, her childhood linked to La Mallorquina, as well as her travels around the world as a source of inspiration for this baked sweet with an emotional background.
For Mapi Hermida, a ‘gastronome’ is a sweet that speaks of tradition and innovation. For a gastronomy enthusiast like me, it has been wonderful to see how the work is done in the oven, how a recipe is made from the beginning, the nuances and the creation process in their workshop in the centre of Madrid to how it has reached the shops, an intense journey full of nuances’, she affirms.
The cinnamon roll, which was born in 1920 between Sweden and Denmark, became a great discovery for Mapi, which led him to embark on a tour of New York and Denmark in order to contribute, together with La Mallorquina, to finding the perfect recipe.
From all this inspiration was born the ‘gastronoma’ and its innovative recipe based on a puff pastry fermented for 48 hours, which awaits the characteristic flavour of cinnamon with a coating of gianduja: an Italian paste made from ground hazelnuts accompanied by chopped hazelnuts.
‘La Gastrónoma‘ will be available in both individual and tart formats in La Mallorquina patisseries for a limited time.
