Recipe of zucchini scarpaccia, the ideal Tuscan cake for appetizer

Today we bring you a traditional recipe straight from Tuscany, Italy. It is a zucchini cake that serves as a perfect appetizer. The scarpaccia -which in Spanish means ‘shoe’- is a healthy food and a different way of cooking zucchini. Take note because it is very easy.

Scarpaccia recipe

Ingredients:

  • 3 zucchini
  • 4 fresh spring onions
  • Fine salt to taste
  • Pepper to taste
  • 90 g flour
  • 40 g chickpea flour
  • 2 tablespoons olive oil
  • Grated Parmesan cheese

Preparation:

  • Wash the zucchini and spring onions thoroughly. Cut the zucchini into thin slices and chop the spring onions. Put them in a bowl, add salt, cover with plastic wrap and store in the refrigerator for two hours.
  • Then use the liquid released by the vegetables to mix with the flour, oil, pepper and grated cheese. Stir well until a well-integrated mixture is obtained -you can add a little water-.
  • Take a baking pan, grease it well and preheat the oven to 190 °C. Spread the mixture and add a little oil and bake for half an hour, or until you see a golden crust.
