Singer Rosalía continues her tour of Latin America presenting her new EP with Rauw Alejandro and the rest of the songs from ‘Motomami’. One of the Catalan singer’s latest stops has been in Mexico, at the Axe Ceremonia Festival held in Mexico City. As in all her concerts, Rosalía takes advantage of a few days to rest, go sightseeing and try the typical food of each place she visits. On this occasion, she has fallen in love with a traditional Mexican dish from the Sinaloa area, in the northwest of the country. It is shrimp aguachile and the singer posted a tweet saying that it was delicious and that it would be “a dream to learn how to make it”. Unsurprisingly, the post got thousands of responses explaining the recipe. Here’s the recipe for the shrimp aguachile that Rosalía has fallen in love with, in case you’ve also been itching to try it. It’s a dish with a shrimp base, lime juice with serrano chilli, salt and pepper to taste, and garnished with red onion and cucumber.

Shrimp aguachile recipe

Ingredients:

  • 500 g medium shrimps
  • 5 serrano chillies
  • 10 lemons
  • 1 red onion
  • 1 cucumber
  • Cilantro
  • Avocado
  • Chilli peppers to taste
  • Salt and pepper to taste

Preparation:

  • First you have to peel and clean the shrimp, removing the head and the typical black vein. Then cut them lengthwise, making a ‘butterfly’ cut or a full cut, whichever you prefer. The prawns are usually served raw, or ‘cooked’ by the lemon juice), but if you are reluctant, you can also cook them beforehand.
  • Next peel the cucumber and cut it into half moons.
  • Squeeze the lime juice over the cucumber and mix with the serrano chilli, coriander, salt and pepper. You can remove the seeds from the serrano chilli if you don’t want it to be too spicy.
  • Place the shrimp in a bowl and coat with the lime and chili mixture. Marinate in the fridge for half an hour.
  • Then add the cucumber in half moons and the chopped red onion. You can also add avocado cut into half moons.
  • If you like, season to taste and serve with toasted bread.
  • Serve with a good michelada in true Mexican style.
