We love it when historic projects like the Albéniz theatre are revived, and even more so when they incorporate a hotel and restaurant for a complete gastronomic and cultural experience. A few months ago the old Albéniz theatre, just a few metres from Puerta del Sol, was transformed into the renovated UMusic Hotel Teatro Albéniz, a differentiating concept that combines five-star accommodation with the best entertainment (in fact, David Bisbal will be performing until 8 April to celebrate its 20th anniversary). But they have gone a step further, creating the restaurant El Albéniz on the first floor, with a proposal that melts in the palate as a pure spectacle.
A very Madrilenian and Spanish proposal
Inspired by the most iconic recipes of Madrid and Spanish culture but with a particular signature touch, El Albéniz’s kitchen is run by Alejandro Moreno, the executive chef of UMusic Hotel Madrid, a creative chef who has worked on projects such as Platea, ME by Meliá and NKO. In this new venture he proposes a festival of flavours among which we can find some nods to Madrilenian dishes but with a neo-Canalla inspiration in keeping with the ambience of the establishment, such as the Rollitos a la Madrileña, a spring roll version of tripe served with spicy tomato sauce; or the Buñuelos de viento, the classic Madrilenian dessert filled with cream cheesecake and red fruit stew.
But there are also other dishes that cover the Spanish geography, such as the roasted aubergine with miso and honey lacquer and finished with crispy rice pearls; the crispy octopus, in two textures and accompanied by piquillos and potato sauce; or the Cachopo of beef entrecote, smoked cheese and truffle emulsion, accompanied by fried potatoes.
Other reinterpreted classics such as fried egg with black pudding, creamy potato, black pudding with onions, fried egg with baby squid and fried noodles, or carrot hummus with crunchy chickpeas and thin slices of carasau, among other delicacies, are also available. And, of course, there is room for those with a sweet tooth, with proposals such as vanilla toast, accompanied by caramel toffee and vanilla ice cream; or homemade strawberry Petit Suisse with yoghurt ice cream, raspberry peta zetas and white chocolate.
If you want to enjoy a gastronomic and cultural tribute in the heart of Madrid, the Albéniz restaurant will become a hotspot for lovers of good food and art. Take note: Calle de la Paz 11.
